Sands Ibiza promises to make 2013 the summer of good taste as Tim Payne, former head chef of Paradise (London, UK) takes charge of the kitchen, with his ex-Paradise colleague Pedro Cervero joining as manager to oversee front of house.

Payne, previously an executive chef for Marco Pierre White and star of ITV’s Hell’s Kitchen, made such a splash as part of Sands’ 2012 Chefs On Tour event that Lynn Cosgrave and Jason Bull who, along with DJ Carl Cox, own Sands Ibiza, invited him to become its permanent head chef. “Tim’s ideas and philosophy in the kitchen make him perfect for Sands,” says Cosgrave. “We aim to a create a place where everyone feels comfortable, families, locals, tourists and DJs alike, with great food and music bringing people together.”

Style

Set on the sparkling expanse of Playa d’en Bossa beach, Sands has long been a favourite playground for a laidback crowd of DJs and music lovers, scooping a ‘Best of Ibiza’ award in 2012. As part of that award-winning effort head chef Tim is on a mission to make the food is as much a talking point as the music and cement Sands’ status as one of Ibiza’s best restaurants. “I’ve been coming to the island for 15 years so I understand the audience,” he says. “People want more than chicken and chips. They want to have a good time in a nice atmosphere, with nice food. Sands has the great location and reputation. Now we’re making it a destination for fantastic dining.”

Sourcing

An ardent advocate of local and seasonal produce, Tim personally oversees every detail of what goes into the Sands kitchen. Pre-season, he scoured the island for suppliers to ensure the restaurant’s fruit and vegetables are home-grown. Bread comes from local bakeries using his personal recipes. Meat is strictly sourced, using only prime cuts from Spain, France or Britain; while fish is primarily caught in the waters around Ibiza. “We are using as many Spanish and Ibizan products as possible,” he says. “We make our own jam, marinate the olives, everything. We can trace every single ingredient.”

This attention to detail extends to the front of house, which is laid out to create space for both dining and dancing, ensuring it maintains a relaxed, sophisticated ambiance that compliments Tim’s perfectly-crafted plates. The wine and cocktail list is carefully selected both for pure drinking pleasure and to enhance the bold flavours of the food.

During the summer Sands will open at 10:30AM, serving coffee and light breakfasts, with lunch served from midday. The à la carte menu will change weekly to reflect the best available produce, with dishes such as stew of Iberico pork loin & monkfish; roast sea bass with pea cream, pomegranate, lettuce hearts, sun dried tomatoes & avocado; and lettuce heart salad with broad beans, fennel & radish, walnut dressing. Tim talks to his suppliers every day to get the freshest ingredient and daily specials will showcase small batches of the finest, most exclusive items he sources. There will also be an all-day tapas menu, served till late, that feature classic Spanish dishes like pimientos padron, gazpacho Andaluz, charcuterie, cheeses, and house-made olives.

Sounds

Sands can boast of being one of the few fine dining restaurants where mixing and cutting is not confined to the kitchen. Music fans can look forward to another season of unforgettable free parties, headed up by Carl Cox and international DJs. Last year these included Pete Tong, Cajmere, Seth Troxler, Maceo Plex, Troy Pierce, Umek, Nic Fanciulli and DJ Mosey. No doubt special guests will be dropping by from Carl’s Space Ibiza night ‘The Party Unites’, which runs every Tuesday at Space from 9 July until 24 September.
